Antioxidants neutralize free radicals, thereby protecting cells from damage. Free radicals are partly product of the body's own metabolism. Metabolism and energy exchange between living organisms and the environment is a fundamental principle of life and one of the major metabolic transformations are oxide reduction reactions that produce mentioned free radicals.

Free radicals are formed in the body also due to environmental pollution, exposure to cigarette smoke or sunlight. In general, the accumulation of free radicals in the body is called oxidative stress and is associated with the aging process and increase the risk of cancer, heart disease, arthritis and other so-called civilization diseases.

As an example we might compare oxidative stress with metal corrosion - metal deteriorates due to oxygen - is rusting. It simply changes characteristics and while aging it becomes unusable. Similarly, free radicals acts on cells. They are very unstable molecules that are stabilized by interaction with antioxidants. Through this mechanism antioxidants reduce the potential damage to cell components such as proteins, DNA, and others.
